Quesadilla



I enjoy having warm, toasty quesadilla with guacamole and salsa. So, I decided to try making them at home. Here's a simple version that I make with corn tortillas. 

Pre-heat oven to 400°F. Lay corn tortillas on a flat pan (I used a round pizza pan and was able to make 4 small quesadillas). Sprinkle pieces of cooked chicken pieces, cheddar, and mozzarella. Cover with another piece of corn tortilla. 

Bake for 3 minutes until cheese has melted. Cut into quarters and serve with guacamole, salsa, or spinach dip.

Ingredients:

  • 8 corn tortillas
  • 1/4 cup of cooked chicken breast meat
  • 2 tablespoons of cheddar
  • 2 tablespoons of mozarella
