Breakfast/Brunch Ideas 06: Loaded Toast

  A healthy version of a 'loaded' breakfast. Toast your f avorite brea d ( here, I 've toasted   multi-grain bread). Dice tomato and pear, and sco op out avocado .  Top it up with a poach ed egg ( season with some pepper if prefer red ). Her e's a post on how I poach eggs . I also added some fresh th yme and oregano from our garden, and sprinkled some chia seeds. Happy trying , and remember to have fun in the kitchen !   Ingredients: 2 slices of multi-grain bread  1/2 a tomato    1/2 a pear 1 av ocado  1 egg (poached) 2 sprigs of fresh thyme 1 sprig of fresh oregano 1/2 teas poon of ch ia seeds

Lemongrass Drink

Here's a n easy recipe for a healthy and refreshing drin k.  I used fresh lemon balm from our herb garden and we finally managed to find fresh lemongrass stalks sold at a grocer not too far away. I have since started to try growing our own lemongrass using the remaining stalks . You can read more about it here .  Put water to boil in a pan . Meanwhile, cut the lemongrass stalks so that you have about 3 in ches of stalk from the bulb. Peel away dried up outer layer from the bulbs , and p ound the bulbs a couple of time s so that it bleeds.  Place lemongrass in the pan to boil for about 20 m in utes. Add lemon balm, g round ginger, honey, and boil for about 5 minutes longer.     Remove from heat , and serve warm or chille d . Happy trying , and remember to have fun in the kitchen!
