Salmon Sandwich


Baked salmon isn't just great as a main course meal, but it also makes a delicious sandwich! Packed with heart-healthy goodness, enjoy this salmon sandwich for breakfast,   lunch, or dinner. I usually make this for breakfast using salmon baked for dinner the night before.  

Place two pieces of baked salmon in a bowl, and separate it into small pieces. Add some sriracha sauce (according to your heat preference) and mayonnaise, and mix well. Spread salmon over multi-grain bread or any bread of your choice, and sprinkle chia seeds. 

On another slice - spread a thin layer of fruit spread with no-added sugar. Line it with spinach leaves, sprinkle grated parmesan, almond slices, and sunflower seeds. Enjoy!

Ingredients:

  • 4 slices of 12-grain bread (or any bread of your preference)
  • 2 pieces of baked salmon
  • 1/2 teaspoon of sriracha sauce (adjust according to your heat preference)
  • 3/4 tablespoon of mayonnaise
  • 2 tablespoons of chia seeds
  • 1/2 teaspoon of fruit spread with no-added sugar
  • 1 cup of spinach 
  • 2 tablespoons of sliced almonds
  • 1 and 1/2 tablespoons of sunflower seeds
  • 1 tablespoon of grated parmesan
