Blueberry Scones


We love the soft and buttery texture of these scones. Plus, they smell lovely! They are also perfect to be given away as gifts. 
Begin by mixing baking powder, sugar, cinnamon, and salt to a bowl of sifted flour. 

In a separate bowl, mix egg, heavy cream, and pure vanilla extract together. 


Next, grate butter right out of the fridge (do not thaw) into the bowl with dry ingredients. Using a rubber spatula or your clean hands, very gently and lightly fold grated butter into the flour mixture. 


Add the mixed liquid ingredients a few spoons at a time until the dough becomes moist. 

Gently fold in fresh blueberries into the dough. Dust some flour on your hands and shape the dough into two rounds and set them aside on two baking trays lines with parchment paper. 

Flatten the dough and slice into wedges. The dough will be sticky, so I recommend that you dust some flour on the knife as well. 

Once ready, bake for 25 minutes or until lightly golden brown in a pre-heated oven at 375°F

  • 2 cups of all purpose flour
  • 1 and 1/2 cups of fresh blueberries
  • 1/2 cup of heavy cream 
  • 1/2 cup of sugar
  • 1/2 cup of unsalted butter
  • 1 regular sized egg
  • 2 and 1/2 teaspoon of baking powder
  • 2 and 1/2 teaspoon of pure vanilla extract
  • 1/2 teaspoon of ground Mediterranean pink salt
  • 1/2 teaspoon of ground cinnamon
