Breakfast/Brunch Ideas 06: Loaded Toast

A healthy version of a 'loaded' breakfast.

Toast your favorite bread (here, I've toasted multi-grain bread). Dice tomato and pear, and scoop out avocado

Top it up with a poached egg (season with some pepper if preferred). Here's a post on how I poach eggs. I also added some fresh thyme and oregano from our garden, and sprinkled some chia seeds.

Ingredients:

  • 2 slices of multi-grain bread 
  • 1/2 a tomato  
  • 1/2 a pear
  • 1 avocado 
  • 1 egg (poached)
  • 2 sprigs of fresh thyme
  • 1 sprig of fresh oregano
  • 1/2 teaspoon of chia seeds
