Asian Chicken Rice
Every time I make this chicken rice recipe at home, we tend to have a bigger portion of rice than we should... second serving is a norm with this one. This recipe is really simple and great for those busy weekdays. You can make and enjoy this hearty meal at home at a fraction of the cost of dining at a specialty restaurant. You will need a few Asian ingredients for this recipe. But, you should be able to find them at a local grocery mart like Walmart or H.E.B.
First, we'll need to prepare the rice. I use a rice cooker. In it, drizzle sesame oil over rinsed white rice grains and add in ginger slices and chopped garlic. Pour in chicken stock and water, and cook according to the instructions of your rice cooker. *Traditionally, you'll need to use the chicken stock obtained from boiling the chicken, and cook the rice with it. However, my version here is an express one.
While waiting for the rice to get cooked, the next step will be to prepare the chicken. I use chicken drumsticks, but you can use chicken parts of your choice. Using sea salt, give the chicken pieces a nice rub. Rinse them out and rub salt on them again along with some sesame oil. Fill a pot with water and place sliced cucumber, parsley, and chicken pieces in it to boil on high heat for about 30 minutes.
While the rice and chicken are cooking, you can prepare the garnish for the chicken and dipping sauces.
Thinly slice cucumber, place in a serving dish and set aside. There are three kinds of simple dips that you can prepare; ginger-garlic dip, black sauce dip, and hot sauce dip.
-Ginger-garlic dip: Finely chop ginger and garlic together, add sesame oil, and mix well.
-Black sauce dip: Mix Hoisin sauce with sesame oil. Add in some hot water and mix well.
-Hot sauce dip: Add garlic powder to hot sauce, add hot water and mix well.
By now, rice and chicken should be cooked. Prepare a bowl with ice cubes and cold water. Gently remove chicken pieces from the stove and dunk them in the ice water bath prepared. This helps to stop the cooking process. Leave the pieces in to cool for about five minutes. Next, gently remove them and place into the serving dish prepared. Drizzle sesame oil and soy sauce.

- 2 cups of white rice grains
- 2 cups of reduced sodium chicken stock
- 1 cup of water
- A thumb of ginger - sliced
- 1/2 tablespoon of chopped garlic
- 1 tablespoon of sesame oil
- To boil chicken:
- 6 pieces of chicken drumstick
- Sea salt - to rub
- 1 cucumber sliced lengthwise
- 1 cup of parsley
- To cool chicken
- Ice cubes and ice water in a bowl big enough to fit the chicken pieces (or you can use two individual bowls)
- For garnish and dressing:
- 1 cucumber sliced thinly
- 2 tablespoons of sesame oil
- 2 teaspoons of soy sauce
- Chopped parsley leaves
- Ginger-garlic dip:
- 2 tablespoons of chopped ginger and garlic
- 1 and 1/2 tablespoons of sesame oil
- Black sauce dip:
- 2 tablespoons of Hoisin sauce
- 2 tablespoons of hot water
- Hot sauce dip:
- 2 tablespoons of hot sauce
- 1 tablespoon of garlic powder
- 2 tablespoons of hot water (adjust according to your heat preference)
