Avocado and Egg Sandwich

I love both, eggs and avocados. One of my favorite ways of having them is as a delicious, healthy, and filling sandwich

Get creative with nuts, seeds, some cheese... and you're done

I make mine with 12 grain bread (I have it plain or with a light spread of marmalade or strawberry spread without added sugar), top it up with chia seeds, sunflower seeds, almonds, and some parmesan cheese. I love having it for breakfast. It's a great alternative for lunch or dinner too!

Ingredients:

  • 2 slices of 12 grain bread
  • 1 egg (sunny side up)
  • 1 avocado
  • 1 tablespoon of sunflower seeds
  • 1 tablespoon of sliced almonds
  • 1 teaspoon of chia seeds
  • 1 tablespoon of parmesan cheese
