Loaded Baguette

An easy party or evening snack using baguette from the bakery and simple ingredients from your pantr y. Preheat oven to 350 ° F . Slice the ba guette and l ay them flat on a no n-stick ba king tray.  Evenly add your toppings of b utter, mild salsa, fresh or dried thyme, oregan o, and parsley , garlic powder, and shredded mozzarella cheese. F eel free to be creative and add on anything else you like. I used store-bought mild and chunky salsa. If you like to t urn the heat up, try it with a spicier version.  Bake for about 5 to 7 minutes or until the crusts are a little crispy to the touch. You may increase the timing a little if you wish. I do no t like my baguette being too hard, so once I see the cheese melting - that's my cue !  Ha ppy trying , and remember to have fun in the kitchen !   Ingredients: 1 baguette - sliced 4 tablespoons of unsalted butter 2 tablespoons o f garlic powder 1/2 a cup of mild and ch unky salsa 3/4 cup o...

Baked Stuffed Mushrooms

A delicious appetizer that's really simple to make , and will be a hit with both, adults and kids.  First , c lean mushro oms and remove their stems. Line baking pan with foil and brush it with olive oil. Next, s tuff the mushrooms with pre-cooked cubed chicken p ieces. Cut up Provolone into smaller pieces and p lace a layer over each mushroom .  To season, sprinkle   ground sea salt , black pepper , and dried I t alian herbs. B ake at 40 0 ° F for 15 minutes . Happy trying , and remember to have fun in the kitchen !   Ingredients: 1 and 1/2 teaspoons of o live oil 12 baby B ellas (stems removed) 1/4 cup of pre-cooked chicken pieces    4 slices of P rovolo ne cheese 1 teaspoon of dried I talian herb s   Ground sea s alt and black pepper to taste

Quesadilla

I enjoy having warm , toasty q uesadilla with guacamole and salsa. So, I decided to try making them at home. Here 's a simple version that I make with corn tortillas.  Pre-heat oven to 400 ° F . Lay corn tortillas on a flat pan (I used a round pizza pan and was ab le to make 4 smal l quesadillas ) . Sprinkle pieces of cooked chicken pieces, cheddar , and mozzarella . Cover with another piece of corn tortilla.  Bake fo r 3 minutes until che ese has melted. Cut into quarters and serve wi th guacamole , salsa, or spinach dip. H a pp y trying, and reme mber to have fun in the kitchen! Ingredients: 8 corn tortillas 1/4 cu p of cooked chicken breast meat 2 table spoons of cheddar 2 tablespoons of mozarella  

Guacamole

A vocados are one of my favorite fruits. I enjoy having them on their own, in salads , sandw iches, and of course... in dips t oo! Here's a simple Guacamole  recipe that  I use for Quesadilla and Tostadas .  Mash ripe avocados in a bowl , add c hopped tomatoes and finely ch opped garlic. S qu eez e juice of half a lime and mi x well (this also helps prevent the av ocado fr om turning brown due to oxidation). Sprinkle some salt and pepper to taste. If preferred, you can add some finely chopped onions and jalapenos too. Ha pp y trying, and reme mber to have fun in the kitchen! Ingredients: 2 ripe avocados - mashed 1/2 medium sized tomato - chopped Juice of half a li me 1/2 clove of garlic - finely chopped ( If preferred, you can add some finely chopped onions and jalapenos too ) Salt and pepper to taste
