Asian Fusion: Spicy Potato Dip (Aloo Masala)

A deli cious spicy dip that we make at home for Indian flat breads and sometimes even served as a side with Quinoa.       Heat olive oil in a pan, and add sliced red on ions, cloves, star anise , and caraway seeds.  St ir fry until fragrant on high heat.  Add in d iced large Russet potatoes and stir fry for a few mi nutes. Next, add chil i p owder, garam masala, curry powder and water. Mix all ingredients well together , cover the pan , and le ave the ingredients to cook on medium heat.  *Y ou do not need to head to a special ty store to obtain these ingredients.   A healthy version of a 'loaded' breakfast. Toast your f avorite brea d ( here, I 've toasted   multi-grain bread). Dice tomato and pear, and sco op out avocado .  Top it up with a poach ed egg ( season with some pepper if prefer red ). Her e's a post on how I poach eggs . I also added some fresh th yme and oregano from our garden, and sprinkled some chia seeds. Happy trying , and remember to have fun in the kitchen !   Ingredients: 2 slices of multi-grain bread  1/2 a tomato    1/2 a pear 1 av ocado  1 egg (poached) 2 sprigs of fresh thyme 1 sprig of fresh oregano 1/2 teas poon of ch ia seeds

Salmon Sandwich

Baked s almon isn't just great as a main course meal , but it also makes a delicious sandwich ! P acked with heart-healthy goodness, enjoy this salmon sandwich for breakfast ,   lunch , or dinner . I usually m ake th is for breakfast using salmon baked for dinner the night before.   Place t wo pieces of baked salmon in a bowl , and separate it into small pieces. Add some s ri racha sauce (accor ding to your heat preference) and mayonnaise , and mi x well . Sp read salmon over multi -grain bread or any bread of your choi c e, and sprinkle chia seeds.  On another slice - spread a thin layer o f fruit spread with no-added sugar . L ine it wi th spinach leave s, sprinkle grated p armesan, almond slices, and sunflower seeds. Enjoy !
