Tomato and Herbs Salmon

We are trying to increase the intake of fish in our meals. So, I have been experimenting with a few different styles and ingredients for variation of fish dishes at home. Here's a recipe that I find perfect especially for work days where I still have to get back home and work on my school assignments/ do research. It is so simple... 

Brush olive oil on a baking pan and lay salmon pieces in. Sprinkle diced tomatoes, fresh oregano and thyme, garlic powder, Chinese five spice powder, honey, ground black pepper, crushed red chili peppers, and sea salt. 

Omit the crushed red chili peppers if you prefer a non-spicy version. Also, you may use dried oregano and thyme if you do not have fresh sprigs at home.


Bake at 420°F for 20 minutes.

Ingredients:

  • 1 tablespoon of olive oil
  • 6 pieces of salmon
  • 1 tomato - diced
  • 4 sprigs of oregano 
  • 6 sprigs of thyme
  • 2/3 teaspoons of garlic powder
  • 1/2 teaspoon of Chinese five spice powder
  • 2 tablespoons of honey
  • 2 teaspoons of ground black pepper
  • 1 and 1/2 teaspoons of crushed red chili peppers
  • 1/2 teaspoon of ground sea salt
