Blueberry Scones

We love the soft and butter y texture of these scones. Plu s, they smell lovely! They are also p erfect to be given away as gifts.  Begin by mixi ng baking powder , sugar, cinnamon, and salt to a bowl of sifted flour.  In a separate bowl, mix egg, heavy cream, and pure vanilla extract together.  Next, g rate butter right ou t of the fridge (do not thaw) into the bowl with dry ingredients. Using a rubber spatula or your clean hands, very gently and lightly fold grated butter into the flour mixture.  Add the mixed liquid ingredients a few spoons at a time until the dough becomes moist.  Gently fold in fresh blueberries into the dough . Dust some flour on your hands and shape the dough into two rounds and set them aside on two baking trays lines with parchment paper.  Flatten th e dough and slice into wedges. The dough will be sticky, so I recommend that you dust some flour on the kni fe as well.  Once ready, bake for 25 ...

Loaded Baguette

An easy party or evening snack using baguette from the bakery and simple ingredients from your pantr y. Preheat oven to 350 ° F . Slice the ba guette and l ay them flat on a no n-stick ba king tray.  Evenly add your toppings of b utter, mild salsa, fresh or dried thyme, oregan o, and parsley , garlic powder, and shredded mozzarella cheese. F eel free to be creative and add on anything else you like. I used store-bought mild and chunky salsa. If you like to t urn the heat up, try it with a spicier version.  Bake for about 5 to 7 minutes or until the crusts are a little crispy to the touch. You may increase the timing a little if you wish. Tomato and Herbs Salmon

We are trying t o increase the intake of fish in our meals . So, I have been experimenting with a few different styles and ingredients for variation of fish dishes at home . Here's a recipe that I find p e rfect especially for work day s where I still have to get back home and work on my school assignments / do research. I t is so simple ...  Brush olive oil on a baking pa n and lay salmon pieces in. Sprinkle diced tomatoes, fresh oregano a nd thyme, g arlic powder, Chinese five spice powder, honey, ground black pepper, crushed red chili peppers, and sea salt.  Omit the crushed red chili peppers if you prefer a non-spicy version. Also, you may use dried oregano and thyme if you do not have fresh spr igs at home. Baked Stuffed Mushrooms

A delicious appetizer that's really simple to make , and will be a hit with both, adults and kids.  First , c lean mushro oms and remove their stems. Line baking pan with foil and brush it with olive oil. Next, s tuff the mushrooms with pre-cooked cubed chicken p ieces. Cut up Provolone into smaller pieces and p lace a layer over each mushroom .  To season, sprinkle   ground sea salt , black pepper , and dried I t alian herbs. B ake at 40 0 ° F for 15 minutes .
