Tres Leches Cake



Looking to impress your special someone, family member, friends, or just yourself :) this Valentine's Day? Try this simple, melt-in-your-mouth, ooh-so-delicious Tres Leches cake

The first time I tried this cake was around five months ago at a restaurant and it was love at first bite! I was determined to try it out at home. I have since made Tres Leches cake several times and made adjustments that work well for us and our guests. Here's my version of the recipe. This cake is best served chilled. So, you'll want to make this cake a day before you intend to serve it and have it refrigerated overnight. 

Tres Leches means 'three milk' - three types of milk used to make this cake. By the way, there's also three parts to making this cake; the cake, milk filling, and topping.

First, mix sugar and butter well until it they form a creamy texture. Next, add eggs and mix well



Add in sieved flour and baking powder to the mixture. Mix well, add vanilla essence and milk. Pour mixture into a buttered non-stick 9"x9" pan. I don't find it necessary to line my pan with foil for this recipe,   but I do recommend brushing a thin layer of butter inside the pan before you pour the batter in. Bake at 350°F in a pre-heated oven for 40 to 45 minutes or once toothpick test is done and it comes out clean. 


While the cake is baking, prepare the milk mixture for the filling. Mix whole milk, evaporated milk, and condensed milk.  Stir well and set aside.  

Once cake is done, slice it in the pan and gently pour the milk mixture into the cake. The milk mixture should just about cover the top of the cake. Slicing the cake helps it to absorb more milk mixture in. Cover the pan with a foil and place the pan in the refrigerator. Remove the pan after an hour to spread the topping.

  
Now, it's time to prepare the topping! Whip heavy cream with vanilla essence until the mixture is light and airy (if you prefer your topping to be sweet, you can add about 1/4 cup of icing sugar into the mixture and whip well).  

Spread topping evenly unto cake and dust ground cinnamon and cocoa powder. Cover, place the pan back into the refrigerator and let it chill overnight.

  • 1/2 cup of sugar
  • 1/2 cup of butter
  • 2 eggs
  • 1 and 1/2 cups of all purpose flour (sieved)
  • 1 and 3/4 teaspoons of baking powder (sieved)
  • 2 teaspoons of vanilla essence
  • 1 cup of whole milk
 (B)
  • 3/4 cup of whole milk
  • 3/4 cup  of evaporated milk
  • 1/2 cup of sweetened condensed milk
 (C)
  • 1 and 1/2 cups of heavy whipping cream
  • 1 and 1/2 teaspoons of vanilla essence
  • 1/3 teaspoon of ground cinnamon
  • 1/3 teaspoon of cocoa powder
