Carrot and Nuts Cake with Cream Cheese Frosting

Wondering what to make for tea over the weekend? Carrot and Nuts Cake with Cream Cheese Frosting would be a lovely item on the menu to delight your family and friends :)  
 

For those who wish to cut down on the calories, just omit the frosting. This cake tastes great even on its own!

First, add soft brown sugar with extra virgin olive oil, followed by eggs and mix well. Next, add ground cinnamon, baking soda, all purpose flour and pure vanilla extract into the mixture followed by half a cup of hot water.  

Add in grated carrots, walnuts, pecans, and raisins, and mix batter well. Pour into a 9" x 9" baking pan lined with foil, and bake in a pre-heated oven at 350°F for 40 - 45 minutes or once toothpick test is done and it comes out clean.

While the cake is in the oven, you can prepare your cream cheese frosting. Mix together cream cheese, butter, heavy cream, (and confectioners sugar if you prefer a sweet frosting). 

Gently spread frosting over the cake...  voila! You're done! :)

(A)

  • 1 cup of soft brown sugar
  • 1 and 1/2 cup of extra virgin olive oil
  • 3 eggs - large
  • 1 and 1/2 teaspoons of ground cinnamon
  • 1 teaspoon of baking soda
  • 2 cups of all purpose flour
  • 1 and 1/2 teaspoons of pure vanilla extract
  • 1/2 cup of hot water
  • 2 and 1/2 cups of grated carrots
  • 1/2 cup of chopped walnuts
  • 1/2 cup of chopped pecans
  • 1/2 cup of raisins

(B)

  • 8 oz. cream cheese
  • 1 tablespoon of butter
  • 1 tablespoon of heavy cream
  • Optional - 1/4 cup of confectioners sugar
