Lemongrass Drink

Here's an easy recipe for a healthy and refreshing drink. 

I used fresh lemon balm from our herb garden and we finally managed to find fresh lemongrass stalks sold at a grocer not too far away. I have since started to try growing our own lemongrass using the remaining stalks. You can read more about it here

Put water to boil in a pan. Meanwhile, cut the lemongrass stalks so that you have about 3 inches of stalk from the bulb. Peel away dried up outer layer from the bulbs, and pound the bulbs a couple of times so that it bleeds. 

Place lemongrass in the pan to boil for about 20 minutes. Add lemon balm, ground ginger, honey, and boil for about 5 minutes longer.   

Remove from heat, and serve warm or chilled.

Ingredients:

  • 7 cups of water
  • 3 bulbs of lemongrass
  • 2 cups of lemon balm
  • 1 teaspoon of ground ginger
  • 1/4 cup of honey
